Antioxidant and Anti-Radical Effects ofQuercetin and Rutin: Methyl Linoleate Model

Abstract: Volumetrically, by the method of external standard (ionol), a comparative evaluation of the antioxidant (AO) and antiradical activity (ARA) of individual flavonoids of quercetin and rutin was conducted under conditions of homogeneous kinetic model of oxidation of methyl linoleate.The manifestation of a higher AOA quercetin in the range of studied concentrations of 9.8·10?6 - 1·10?2mol/l was established. A number of reducing the AOA compounds: quercetin>rutin>ionol was received. It was established that at a concentration of 2·10-5mol/l and smaller ARA quercetin is 4.8 and 1.6 times higher than ARA rutin and ionol, respectively. A simple mechanism of action of quercetin and rutin at concentrations of less than 2.0·10?5mol/l, i.e. participation only in chain breakage reactions; for concentrations of greater 2.0·10?5mol/l, the participation of the inhibitors under study in chain continuation reactions and a higher ARA of quercetin than rutin was established.
