Clarification of Soursop Juice with Alpha Amylase from Aspergillus niger OMA1 strain

Abstract: Soursop fruits (Annona muricata L) are found commonly in many of the southern states of Nigeria and it is mostly eaten as fresh fruits. Soursop fruit is known for its many medicinal values. It is known to contain certain natural compounds with therapeutic abilities that confers on it the benefit of being able to treat many ailments. Alpha amylase is a class of amylases that aid in the breakdown of internal ?-1,4-glycosidic linkages in starch. They are an important class of enzymes employed in juice clarification processes. The aim of this work was to produce soursop juice and clarify same with different volumes of crude and purified alpha amylase produced by Aspergillus niger OMA1 strain. The alpha amylase was purified using activated carbon. The results showed that the highest volume of clarity and juice recovery was obtained using a volume of 20ml of enzyme for the clarification of 50ml of produced juice.
