BIOLOGICAL MEAT VALUE AND PRODUCTIVITY OF STEERS IN THE CONDITIONS OF NON-CHERNOZEM ZONE

Abstract: Meat productivity indicators of Black-and-White, Aberdeen Angus and Hereford steers were analyzed on the bases of the research results. The steers were grown and measurements were made on the farm "Favorite" in Tula region. Steers were grown under identical conditions of feeding and maintenance of beef cattle from the age of 6 months to live weight of 450-500 kg (15 months old). Comparative analysis of the dynamics of live weight, average daily growth, the rate and intensity of growth of purebred steers of Black-and-White, Aberdeen Angus and Hereford breeds revealed a significant superiority of the latter on the studied age periods. Slaughter yield difference between Black-and- White steers and Angus and Hereford steers equals 11,6% and 1,3% respectively. The highest yield of the meat content in the carcasses was obtained from Aberdeen-Angus steers– 81,37%.It is higher than the yield of Black-and-White and Hereford steers by 4,20% and 1,28% respectively. Meat from Aberdeen Angus steers and Hereford breeds contains more fat: 17,81% and 14,25%, respectively. This indicates a higher nutritional value of the meat of these breeds of steers. To increase production of high-quality beef in the conditions of the Non-chernozem zone of Russia it is recommended to use specialized meat breeds - Aberdeen Angus and Hereford. Meat received from these breeds met the requirements of production of culinary food products and specialities.
